QUICK SMOKED SALMON KEDGEREE
(Serving Size 4)

Stir-Frying

 

INGREDIENTS
- Eggs (hard boiled and quartered) 4
- Spring Onions (sliced) 4
- Rice (frozen and thawed) 6 cups
- Peas (frozen and thawed) 1 cup
- Salmon Fillet (smoked and sliced) 200 g
- Butter 60 g
- Cherry Tomatoes (halved) 10
- Lee Kum Kee Curry Sauce 1 tbsp
- Lee Kum Kee Freshly Minced Garlic 1 tbsp
- Lee Kum Kee Freshly Minced Ginger 1 tbsp

INSTRUCTIONS
1. Heat butter and 2 tbsp oil together in a large frying pan. Saute Lee Kum Kee Minced Ginger, Lee Kum Kee Minced Garlic, and Lee Kum Kee Curry Sauce for 30 seconds.

2. Add rice. Cook and stir for 1 to 2 minutes or until evenly coloured and hot.

3. Stir in peas, salmon, and tomatoes. Cook and stir for 2 to 3 minutes. Serve immediately topped with egg and green onions. Accompany with crusty bread and salad.

NOTE: Serve drizzled with a little Lee Kum Kee Chili Garlic Sauce or Premium Soy Sauce if you like.
