SEAFOOD PIZZA
(Serving Size 4)

INGREDIENTS
- SpringHome Roti Paratha 4 pieces
- Cheddar Cheese (grated) 300 g
- Garlic (chopped) 2 cloves
- Fresh Squid (cut into rings) 2 medium
- Prawns (shelled) 16 medium
- Mussels (shelled) 16 medium
- Olive Oil 30 ml
- Salt & Pepper ¼ tsp each

TOMATO SAUCE
- Onions (finely chopped) 2 medium
- Garlic (crushed) 3 cloves
- Olive Oil 30 ml
- Stewed Tomato 1 tin
- Water 4 tbsp
- Dried Oregano 1½ tsp
- Sugar 1½ tsp
- Salt and Pepper ¼ tsp each

INSTRUCTIONS
1. To make the sauce, fry onions and garlic in olive oil until beginning to brown.

2. Turn heat down to low and simmer for 10-15 mins or until soft.

3. Add tomato, water, oregano and sugar. Mix well and season to taste with salt and pepper.

4. Bring sauce to boil and simmer for another 5 mins. Set aside and allow to cool.

5. Preheat oven to 180OC. Bake Paratha until golden brown on each side. Remove from oven and set aside.

6. In a hot frying pan, lightly fry the mussels, squid and prawns in olive oil until prawns are pink.

7. Remove from heat immediately and allow to cool. Divide seafood into 4 portions.

8. Top each cooked paratha skin with tomato sauce, garlic, cheese and seafood.

9. Bake in oven for 5-10 mins or until cheese is melted and bubbling.
